There’s something unmistakable about opening a freshly roasted bag of coffee. The aroma is rich, sweet and vibrant — the kind of smell that instantly makes you want to brew a cup. But many coffee drinkers still wonder: how do I actually know if my coffee beans are fresh?

Why Coffee Freshness Matters
Freshness matters more than many people realise. Fresh coffee contains delicate aromatic compounds that slowly fade over time. As coffee ages, it loses vibrancy and can begin tasting flat, dull or bitter. Freshly roasted coffee tends to taste sweeter, more balanced and far more enjoyable.
Roast Date vs Best Before Date
The first thing to look for is the roast date. Fresh coffee should always have a roast date clearly printed on the bag. A “best before” date can sometimes be 12–18 months away and tells you very little about when the coffee was actually roasted.
In our experience, most coffee beans taste best between around 7 and 30 days after roasting, depending on the brewing method. Espresso often improves after resting for several days, while filter coffee can taste beautiful slightly earlier. The Smell Test
Your nose is one of the best freshness tools you have. Fresh coffee beans should smell fragrant and inviting. You may notice notes of chocolate, caramel, berries, nuts or citrus depending on the origin and roast profile. Stale coffee tends to smell flat, dusty or almost cardboard-like.

Signs During Brewing
Another clue appears when brewing. Fresh coffee usually creates more crema in espresso and more bloom in plunger, pour-over or filter brewing. Bloom is the bubbling and expansion you see when hot water first hits fresh ground coffee. This happens because freshly roasted beans still contain trapped carbon dioxide.

What Fresh Coffee Tastes Like
Taste is where freshness becomes most obvious. Fresh coffee generally tastes sweeter, smoother and more balanced. The flavours feel clearer and more vibrant. Stale coffee often tastes dull, bitter or hollow, even when brewed properly.
Common Myths About Coffee Freshness
One of the biggest myths we hear is that oily beans mean fresh beans. In reality, oil on the surface often relates more to roast level than freshness. Dark roasted coffee naturally releases more oils over time.
Storage also makes a major difference. Coffee beans dislike heat, moisture, sunlight and oxygen. We always recommend storing beans in their original bag with the one-way valve sealed tightly, or in an airtight container kept in a cool pantry.
One thing we don’t recommend is storing daily-use coffee in the fridge. Frequent temperature changes can create moisture and impact flavour over time.
