Description
There are some coffees you discover… and then there are some that stay with you.
From Mark & Sim
This is one of those coffees that reminds us why we do what we do.
We didn’t just source this coffee—we stood in the mountains where it was grown, shared stories with the farmers, and saw the journey from tree to cup.
We’re incredibly proud to bring it to you.
Tasting Notes:
A truly expressive and slightly unexpected organic cup.
- Soft lychee sweetness
- Apricot brightness
- Sweet spice and almond undertones
- Juicy, almost sticky body
- Tart malic acidity (think green apple freshness)
- A gentle walnut finish
It’s a coffee that evolves as it cools—bright and lively upfront, then settling into a smooth, nutty finish that keeps you coming back for another sip.
About This Coffee
This beautiful Organic East Timor Maubisse comes from the highlands of Timor-Leste, where we recently spent time with the incredible team at Cooperativa Café Timor (CCT). Walking through the farms, meeting the farmers, and seeing the process firsthand—this is a coffee we chose not just for its flavour, but for its story.
Grown at elevations of 1,500–1,600 metres in the Maubisse and Aifu regions, this Grade 1, fully washed Arabica delivers a cup that is vibrant, layered, and quietly complex.
This is coffee at its most honest—organic by nature, community-driven, and full of character.
The Origin Story – Maubisse, Timor-Leste
High in the mountains of Timor-Leste, Maubisse is a remote and rugged coffee-growing region where farming is still done much the same way it has been for generations.
Coffee here is grown by smallholder farmers, often on tiny plots of land, with minimal intervention and a deep respect for the land. The result is coffee that is naturally organic and deeply connected to its environment.
This particular lot comes through Cooperativa Café Timor (CCT)—an organisation formed after independence in 1999 that now supports over 19,000 farmers across the country.
CCT doesn’t just produce coffee—it invests in communities, providing healthcare, education, and sustainable income to farming families. Every cup of this coffee plays a small part in that bigger story.
Why We Chose This Coffee
This one is personal.
After spending time in Timor-Leste and seeing firsthand the work being done by CCT, we knew we had to bring this coffee home to Kimberley Coffee Company.
It represents everything we believe in:
- Ethical sourcing
- Real relationships with farmers
- Coffee that tells a story
- And flavour that stands on its own
It’s not a “big, loud” coffee—it’s refined, balanced, and quietly impressive. The kind of coffee you drink slowly… and remember.
